Cooking is one of our love languages and even though some nights it feels more like a chore, when there is a family pleasing recipe that is simple and super customizable we get really excited! The Half Baked Harvest Cookbook is one of our favorites for simple weeknight dinners and her recipe for Broccoli & Chicken Paninis is one of our go-to’s! You can substitute the chicken for chickpeas for our veggie friends out there (without sacrificing any flavor!) and replace the broccoli with lots of other in season veggies – cauliflower, zucchini, peppers, tomatoes, etc. Get the full recipe in this fantastic cookbook.
Simply chop some broccoli and cook up some chicken (we recommend an instant-pot for quick cooking and clean up!), mix it with some greek yogurt, shredded cheese and seasoning. Then spread some ciabatta rolls with pesto, fill with the mixture and fry up in this lodge panini grill pan.
Now set the ambiance with one of our favorite bougie candles that make any night feel like a special occasion, use the nice linen just for kicks and blast some of your favorite tunes.
